Food trucks in Connecticut
Connecticut food trucks, trailers and carts are licensed as itinerant food vendors by local health departments and health districts. The Department of Public Health (DPH) runs a reciprocal licensing agreement: a vendor licensed and inspected by one local health department can operate in another only if both health departments have signed it. Fire, parking, zoning, building and other local permits are not covered by the agreement and must be obtained from each town that requires them.
Who issues food truck permits in Connecticut
Licensed by county or city health departments
DPH's itinerant vendor pages do not set a statewide commissary rule. Hartford asks mobile vendor applicants for signed verification from their commissary or servicing facility. DPH's vendor FAQ says a truck working an event under its original permit must be able to leave the site for potable water, wastewater disposal and resupply. Source ↗
DRS says you must register and get a Sales and Use Tax Permit if you sell goods in Connecticut, and you can register online through myconneCT. DRS listed a $100 registration fee on 2026-09-30, and the permit should be displayed where customers can see it; Hartford asks mobile vendors for a copy of it. Source ↗
The Office of State Fire Marshal's General Information Notice 2016-01 says the State Fire Prevention Code applies to the LP-gas systems on food trucks and carts (Chapter 69 and NFPA 58) and that portable fire extinguishers are required where commercial cooking equipment is used. The notice dates from 2016, so check current requirements with the local fire marshal; New Haven, for example, requires a Fire Marshal's Office sign-off, where applicable, before the health inspection. Other health departments can inspect you but cannot charge inspection fees.
Does reciprocal licensing cover fairs and festivals in Connecticut?

Its supporting documents list includes commissary verification, a proposed menu and locations, a CT Sales and Use Tax Permit, and liability insurance naming the City as an additional insured.
