Fryers, griddles and charbroilers
Most savory food trucks build their menu around a flat-top griddle, one or two fryers and sometimes a charbroiler. Gas units run on propane in most trucks and trailers; electric units need enough generator capacity. Check the unit's gas or power rating against your truck's supply before you buy.
Holding and prep
Steam tables and food warmers keep cooked food hot, and refrigerated prep tables keep ingredients cold at the point of service. Health departments check holding temperatures during inspections, so size your holding equipment for your busiest service.
Certified equipment
Many health departments require commercial food equipment that is NSF/ANSI certified or meets an equivalent sanitation standard. Ask the supplier for the certification of each unit and keep the documents for your plan review.
Exhaust hoods and fire suppression
Cooking that produces grease-laden vapors usually needs an exhaust hood and a fire suppression system. NFPA 96 is the fire code standard for commercial cooking ventilation, and many local fire departments inspect food trucks against it. Confirm the local rules with your fire department before you install equipment.
