A curated food festival, not a general pitch
Big Grill selects on the food, not on the ability to fill a slot. Traders are chosen because they do something specific and do it well — low-and-slow brisket, whole-animal cooking, live-fire seafood, regional barbecue traditions. A generic burger van will not be selected. If your offer is not built around fire, this is not your event, and applying anyway wastes your time and theirs.
Live fire brings extra compliance
Open-fire and charcoal cooking carries fire-safety obligations well beyond a standard gas trailer. Expect scrutiny of fire separation distances, extinguisher provision (including wet chemical for any fryer), ember management, and how you extinguish and dispose of coals at close each night. Solid-fuel cooking also sits outside the scope of an RGI gas certificate — you still need the gas cert for any LPG appliance, but it does not cover the fire side.
