A pizza trailer is one of the strongest street-food formats in Ireland and one of the most demanding to build, because the oven brings a problem no other appliance does: weight. Get the weight calculation wrong and you have a trailer you cannot legally tow.

Weight is the constraint that catches people out
A commercial pizza oven — particularly a masonry or refractory wood-fired one — can weigh several hundred kilos before you add the trailer, the counters, the fridge, the gas bottles and the stock. That lands squarely in the territory where your licence category and the towing vehicle both matter. Work out the fully laden weight before you commit to an oven, not after, and read the towing licence guide: a B licence has real limits and a B+E test is not a formality.
Gas versus wood
Gas ovens heat quickly, hold temperature predictably and are far simpler to run in service — which matters when you are alone at a market. Wood-fired ovens give the flavour and the theatre, and at a festival that visible fire is genuinely part of the sell, but they need a long pre-heat, constant management and somewhere to carry and store dry fuel. Many trailers run gas with a wood-effect finish for exactly these reasons.
Heat management in a small space
A pizza oven at 400°C in an enclosed trailer is a serious working-environment problem. You need proper extraction, heat shielding on adjacent surfaces, and a layout that keeps the operator out of the direct radiant path. It is also worth thinking about the cold side — a fridge sitting next to a 400°C oven works considerably harder and fails sooner.
