The St. George Fire Department's food truck guidelines say statewide food truck rules took effect January 1, 2018. A truck that passes its fire inspection receives a state-approved inspection sticker placed inside the rearmost door, and trucks that cook with grease need a Type I hood with an automatic fire-extinguishing system to pass.
